Basque Cheesecakes with Toppings

If you thought the cheesecake was good on its own, this is the upgrade. This high protein cream cheese topping is smooth, lightly sweet, and pairs perfectly with fresh seasonal fruit for a contrast of richness and freshness. It adds that “finished dessert” feel while still keeping things balanced.

Basque Cheesecake with High Protein Topping

Equipment

  • 1 x 4 Inch Cake Tin

Ingredients

  • 20 grams light cream cheese
  • 40 grams greek yoghurt
  • 7 grams sweetener

Instructions

  • Follow the instructions for the Original Basque cheesecake and allow it to cool completely.
  • In a bowl, combine all topping ingredients and mix until smooth and spreadable.
  • Spoon the topping over the cheesecake and finish with fresh fruit of your choice (I love using blueberries, mandarins, and a little mint for a fresh touch).

Notes

Adjust the ratio of cream cheese to yoghurt to achieve your preferred consistency. Thicker for a richer finish, or lighter and looser for a more refreshing topping.
