Apple Pies

I freaking LOVE McDonald’s apple pies. There’s just something about biting through that crispy golden shell and getting hit with the warm, cinnamon-spiced apple filling inside. This recipe was inspired by that craving. The filling is soft, jammy, and packed with cinnamon, while the outside turns perfectly crisp in the air fryer.

The best part is that it comes together with ingredients I almost always have at home, so I can make one whenever the craving hits instead of debating whether it’s worth leaving the house. It also happens to be a little lighter and higher in protein than the original! This is the kind of dessert you’re already planning to make again before you’ve finished the first one.

Equipment

Ingredients

Apple Pie FILLING

  • 2 tbsp water
  • 1 apple (Granny Smith)
  • 20 grams sweetener
  • 1 tbsp cinnamon powder
  • 1 tsp lime juice
  • corn starch slurry (mix 1 tsp corn starch with 2 tbsp water)

Apple Pie CRUST

  • 2 slices high protein bread
  • ½ egg, beaten

Instructions

  • Dice your apple into small pieces (I like using Granny Smith apples for their tart flavour, but any firm apple will work).
  • Add the water and diced apple to a small saucepan and cook over low heat for 2–3 minutes. Stir in the lime juice.
  • Add the cornstarch slurry and stir until thickened. Mix in the sweetener and cinnamon, then cook for 1 more minute. Set aside to cool.
  • Remove the crusts from the high-protein bread and flatten each slice with a rolling pin.
  • Divide the apple filling between the bread slices. Brush the edges with beaten egg, fold over, and crimp the edges closed with a fork.
  • Cut a few slits in the top of each pie and brush with more beaten egg.
  • Air fry at 180°C for 7 minutes, or until golden and crispy, making sure to flip halfway (and brush the other side with your beaten egg)!
